‘Battered’ chicken teriyaki - a slimming world favourite

Low syn, bite-sized pieces of chicken teriyaki deliciousness

This recipe is so easy I’m actually a little embarrassed to upload it to my blog. I mean, shop-bought teriyaki sauce? Yep. Using smash powder? Yep, that too. Not-quite-instant noodles? Sure thing. So here’s how to make this bowl of healthy food punked up as junk food. It’s scrumptious, healthier than a takeaway for sure and a briliant fakeaway.

Stats:

The recipe serves 2, and is 2 syns per portion. No healthy extras are used. You don’t need anything special to make it really, just the usual - an oven, a saucepan and a chopping board!

Ingredients:

2 medium sized free range chicken breasts, diced into chunks about 1 inch square

2 tbsp shop bought teriyaki sauce (1.5 syns per tbsp/1 syn per tbsp depending on brand, check the SW app!)

2 tbsp smash mashed potato powder (approx 1 syn)

1 egg, cracked into a bowl and blended with a fork

Cucumber, sliced

Carrot, grated or juliette peeled

Green part of 2 spring onions, diced

Dried egg noodles, to serve (enough for two)

Salt

Pepper

Method:

  1. Preheat your oven to 180 and prepare a small non stick baking tray with baking paper and frylight on the top.

  2. Dice your chicken into bite sized pieces and prepare your bowl with the egg in, and a plate with the smash on.

  3. Add some salt and pepper to your smash mix and stir gently on the plate.

  4. Start the dipping process! Take each piece of chicken and dip in the egg first and then roll gently in the smash. Place each piece on the baking tray gently. Continue until all pieces are done in this way.

  5. Into the oven for about 10-12 minutes. Chicken doesn’t take long to cook when it’s diced up small!

  6. While the oven is on, prepare your noodles as recommended on the packet and slice your accompanying cold veg (cucumber, carrot and spring onions work well). If you prefer hot veg, that’s also fine.

  7. Drain your noodles and set your veg to one side. Remove the chicken from the oven and into a small clean bowl. Coat well with the teriyaki sauce and plate it all up.
