Low fat kale salad with squash, cranberries and feta

A new Slimming World salad favourite that’s low fat, filling and delicious.

This veggie salad is a new favourite of mine. It’s packed out with lots of greens and you get the sharp and savoury hit of the apple and feta versus the sweet cranberries and butternut squash. It’ll take minutes to make, so long as you’ve pre-roasted your butternut squash. If not, it’ll take about 45 minutes for the squash to cook.

Recipe makes enough for 2. It’s 2 syns per portion, if you want to cut back the syns try halved grapes instead of dried cranberries and it’ll be syn free.

Ingredients:

A pack of kale

25g dried cranberries (4 syns), chopped up small

1 apple, cored and sliced thinly

45g feta (one healthy extra a choice, so half a healthy extra per portion)

2 handfuls of roasted butternut squash (just roast it in small cubes in the oven for 45 minutes with frylight at about 200 degs).

A dressing of your choice. I made mine from balsamic, sesame oil, honey and wholegrain mustard so it does have syns but choose your own from the fat free options available!

Method:

  1. Prepare your butternut squash if it’s not already ready, as per the above.

  2. Wash your salad leaves and plate up kale onto two plates.

  3. Add your chopped cranberries, feta and apple and mix well. Top with your butternut squash and serve with your favourite dressing (remember to add syns if you need to!)
