Hash brown, sausage and egg breakfast stack

This Mcdonalds style slimming world fakeaway will set you back just 2 syns including some brown sauce or 1 syn without. 

Not a lot of people will know this but I live right next to a Mcdonalds (so glamourous, I know). Anyhow, sometimes as I walk past I'm seriously tempted to pop in for some junk food. However, today I had some motivation in my pocket and I decided to make my own. It's a little bit messy to make (grating potato is a serious woe of mine in the kitchen) but ultimately, the mess is worth every bite. 


Makes enough for 1 and it's 2 syns per portion. I used 0.5 syn Good Little Food Co skinny sausages, be very careful which sausages you use as syns do vary massively. This recipe also uses 1 x Healthy Extra B choice or it's 6 syns if not. 


1 x Warburtons wholemeal protein thins ( 1 x HEB choice)

2 Good Little Company Skinny Sausages (0.5 syns each)

2 eggs 

1 medium-sized white potato 



Half a tsp dried parsley



1. Preheat the oven to 200 degrees (for fan-assisted, adjust accordingly otherwise). 

2. You'll need to prepare your hash browns first and to do this you should grate a whole potato coarsely. I don't usually bother to peel it but you can if wish. 

3. Once it's all grated, you need to wring out all the water. I do this by holding it in my hands over a sieve in the sink. You can also pop it in a tea towel and wring it out that way if you prefer. Just make sure as much moisture is gone from the grated potato as possible. 

4. Pop the potato into a bowl and add one egg, plus a grind of salt and pepper. Mix well and form into two square shaped patties. 

5. Pop these two patties into a frying pan sprayed with frylight on a medium heat for about 3 minutes on each side, turning very carefully as they don't hold super well. Once they're browned off on either side, pop onto a baking tray and into the oven for about 25 minutes, turning once during that time. 

6. While your hash browns are cooking in the oven, prepare your sausagemeat patties. To do this, simply take your two sausages and remove their skin. Into a little blender with some black pepper and a tsp of dried parsley to add some extra flavour. Mould into a square patty shape and pop into the oven with a little frylight for about 15-20 minutes or as directed on the packet (it may vary from sausage to sausage depending on which ones you use). 

7. When your hash browns and sausagemeat patties are ready, remove from the oven and set to one side. Fry up an egg and start preparing your stack. Cut your sausagemeat into two thinner slices and pile up the hash browns, sausage slices and then the egg on the top of your warburtons thin pieces. Add a little sauce if you like for a syn or two.
