Parma ham, cheese and walnut Savoyarde summer style salad
I'm getting into salad season as I try and trim down for Summer so here's an easy peasy salad that you can make in just a few minutes (if you have your potatoes pre-cooked!) I absolutely love the salads you can so easily pick up in France, in particular, the ones in the Alps where it's loaded with cheese, ham, nuts and a yummy vinaigrette! Alas, that doesn't always lead to a French-chic figure, so I've made this lower calorie version.
Makes enough for 2 people. It's 0 syns per portion if you follow slimming world but do watch out to make sure the dressing you use is fat free otherwise you will incur a few syns!
4 slices of parma ham, fat removed (note that if the fat is not removed fully, it's 0.5 syns a slice)
1 bag mixed green salad
Handful of baby tomatoes
8 miniature baby new potatoes, boiled, drained, cooled and sliced
1 apple, Braeburn is a good choice but any will do!
10 walnut halves (2 x Healthy Extra B choice)
60g mature cheddar, cubed (2 x Healthy Extra A choice)
A dressing of your choice, a fat-free French style vinaigrette is recommended
Add all the ingredients except the parma ham to a bowl and mix well. Add the parma ham to the top and serve immediately! Simple :)
