Smoked mackerel salad with creamy dressing
A slimming world friendly but very filling salad.
This salad is a real gem for a light Summer dinner as it packs in the flavour and doesn't leave you feeling hungry. A small amount of syns only for the mackerel and croutons!
2.5 syns per portion without croutons, or 5.5 per serving with. Recipe makes enough for 2 people.
2 smoked mackerel fillets (2.5 syns per 100g, that's approx 1 fillet is 2.5 syns each usually but do check the weight of yours)
Mixed salad (I included radishes, sliced, in mine)
1 grated carrot
1 quarter grated or finely sliced cabbage
4 tbsp fat-free yoghurt
1/2 tsp mustard powder
1 tsp horseradish sauce (0.5 syns)
A pinch of sweetener (I used Stevia)
1 apple, sliced thinly into little batons
25g Croutons (5.5 syns)
Pomegranate seeds, a small handful per person
Well, this won't come as a huge surprise but it's kind of a throw together job. However, you do need to create your 'coleslaw first'.
1. Take your grated carrot and grated cabbage and mix with 2 tbsp fat-free yoghurt and your mustard powder. You can also add lemon juice and black pepper to taste.
2. Prepare your salad bowl with any leaves and veg you would like. Top it with your coleslaw. Add mackerel, apple and shop-bought croutons (or make your own if you wish out of your healthy extra b choice to cut down those syns).
3. Top with a simple dressing. To make, mix your remaining 2 tbsp fat-free plain yoghurt with 1 tsp horseradish, a pinch of sweetener, lemon juice and black pepper. After you've dressed it, add your pomegranates to the very top.
4. Serve immediately and enjoy!
