Spiralised beetroot with bacon, lemon, coriander and feta
I saw some spiralised beetroot in the supermarket and thought I'd give it a whirl. It turned out pretty nicely and it's a super quick meal to cook, so good for a weeknight if you're getting home late after work.
Syn free if using the feta as your healthy extra A choice. If not, 6 syns per portion. This recipe makes enough for 2.
500g Spiralised beetroot (either make your own, or I bought mine from Tescos in the freh food aisle)
90g feta (2 x 45g healthy extra a choices)
4 rashers of bacon, fat removed and chopped into small pieces
Half a lemon, squeezed
2 tbsp approx of fresh coriander, chopped roughly
1. Take a frying pan or wok and spray with frylight, before adding your bacon to fry it off.
2. Add the rest of the ingredients except the feta and cook stir fry style for 2-3 minutes. Add the feta last minute and crumble it in.
3. Serve right away.
