slimming world orange and cherry brownies
Slimming world recipes... orange and cherry brownies!
This recipe will make 12 and they are about 1.5 syns each. If you remove the OJ and the cherries you're looking at 1 syn each but I think it's worth the syns to make it taste better. I'll preempt by saying whilst I think these are a good alternative as a very low syn treat, they're a little more cake-like than real brownies but I really like them regardless. They're also gluten free, which is a pretty nice win!
Makes 12. 1.5 syns per brownie, or 1 syn if you don't use cherries or orange juice in your recipe.
6 eggs, separated
60g cocoa powder (10 syns)
40g sweetener (2 syns)
1 tsp vanilla essence
1 tsp chocolate essence
1 tsp orange essence
Juice of half an orange
100g Chopped cherries, chopped finely and small works best (cooked fruit is 2.5 syns per 100g)
Frylight (just to line the tin)
1. Preheat the oven to 180 (for fan assisted ovens) and frylight/ line a medium sized tin fully with baking parchment. I used a tin that was 30cm x 15cm, a little smaller would work fine.
2. Take 6 eggs and separate the yolks from eggs.
3. In your bowl with the yolks add 60g cocoa powder, 40g sweetener (I used Sukrin Gold, it's excellent), 1 tsp vanilla essence, 1 tsp orange essence, 1 tsp chocolate essence (all syn free from big supermarkets only usually), plus the juice of half an orange. Mix well. It should be a smooth paste, if it isn't, add a few tbsp of water.
4. In another bowl, whisk your egg whites separately until they form very stiff peaks. Very carefully fold in your egg whites to your other choc mix keeping as much air in as possible and pour the mix into the baking tin. Gently drop in chopped cherries (or raspberries) and straight into the oven for 15-17 minutes. If a knife comes out clean they are ready.
