Delicious low fat crusted peri peri steak
New favourite steak recipe. I saw an article about making crusts and thought I'd do a #synfree version with slimming world chips and kale. I follow the Hawksmoor method for cooking steak and find it works a treat every time.
Makes enough for 2 people. Syn free and no healthy extras (hurrah!)
2 sirloin steaks, fat removed
4 tbsp peri peri seasoning
2 tsp dried coriander
1 tsp ground cumin
2 pinches of garlic powder
1. To make the crust, pop the peri peri seasoning, dried coriander, ground cumin and garlic powder into a bowl and mix well.
2. Let the steak sit at room temperature for an hour if it has been in the fridge. Dry off the sirloin steak with some tissue, cut off the fat and then coat thoroughly in the mix, and leave for 30 mins or so (out of the fridge). I realise some people are funny about meat being out, but steak should never be cooked from cold it makes it tough!
3. Get the grill pan really hot (too hot for your hand to hover over the top) and place the steak in with no oil. Cook for 4 minutes, turning every minute for medium rare.
4. ENJOY with slimming world chips and veg, or a salad.
