Low fat slimming world coronation chicken

I love coronation chicken and it's sort of surprised me that I haven't ever made it before. My Mum used to make it at home (the lovely calorific version with tons of mayo, nom!). Alas, with the whole losing weight malarkey being a factor, I had to find an alternative and this definitely hits the spot.


Serves 1 (I just made it for my lunch!) 3 syns per portion, if you leave out the fruit it's just 1 syn per portion (but I love the fruit!). 


175g cooked plain chicken, chopped into small ish pieces (1 inch approx cubes)

1 tbsp extra light mayonnaise (1 syn)

2-3 tbsp quark 

1 tsp mild curry powder

Quarter tsp paprika

Quarter tsp turmeric 

Quarter tsp ground coriander 

1 level tbsp dried fruit (2 syns) 


1. Mix all of your ingredients in with the chicken.  You may need to add a little extra quark or a little more curry powder to taste.

2. Serve immediately or later with a fresh green salad and a jacket potato. Yum!
