Slimming world classic big English breakfast

Oh Slimming World, how I love you when it comes to breakfast. You make it so easy to have a massive fry up without compromising much at all! Since I’ve had lots of queries about my breakfast Instagram post, I thought I’d better share how to rustle up this breakfast-brunch-thing-of-dreams.


Makes enough for two people, totally syn free, no healthy extras used at all. WOOP! You can also add a low syn or syn free sausage, or some home made hash browns (recipe here for those), just make sure you check the syns via the SW app if that matters to you.


2 large white potatoes (jacket sized)

6 rashers of bacon, fat trimmed off


4 eggs (I prefer free range, cause… ya know, the little chickadees’ welfare is important, and they taste better too!)

1 small tin baked beans

8-10 medium sized chestnut mushrooms

Baby tomatoes





  1. Preheat your oven to about 200 if fan assisted, or adjust appropriately.

  2. Start by preparing your potatoes. Wash them and slice into cubes about one inch long and one inch thick, kind of like the size of each section of a rubix cube, if that helps guide you. It doesn’t need to be precise.

  3. Spray a baking tray with frylight and pop all your cubes onto it, and spray some more. Be liberal with it (but no more than 10 sprays, otherwise it’s syns). Pop into the oven for 40-45 minutes, turning at least once but preferably twice, and reapplying more frylight if you need it or if it’s sticking.

  4. Meanwhile, when your potatoes are about 10 mins off being ready, prepare the rest of the meal. Put your tomatoes in an ovenproof dish and bung into the oven for about 10 minutes.

  5. Wash and quarter your mushrooms and pop into a saucepan with a lid. Add a tiny bit of frylight, plus salt and pepper. If they lose a lot of water, pour some of it away. If not, keep them going until they’re not slimy enough and are nice and dry. At this point, add a quarter tsp of marmite. Even if you don’t like marmite, I swear, they taste amazing!

  6. Fry up your rashers of bacon with fat removed.

  7. Boil a pan of water and poach your eggs. If you’re new to this, I strongly suggest you do the clingfilm method. My guide to this is here, it’s so easy you cannot get it wrong and you’ll never think about making a whirlpool or that silliness again!

  8. Microwave your beans in a heatproof jug or bowl.

  9. Serve everything up hot and eat it fast before someone else does (or maybe that’s just my house rules…)
