Slimming world breakfast quesadilla
Sometimes I get, you know, a little experimental in the kitchen. Today was one of those days. I’d bought some wholemeal wraps for no good reason in the supermarket, and as I pondered my breakfast options, suddenly QUESADILLA came to me like a lighting bolt!
This recipe only serves one* (*one greedy gal like me, specifically) but you can easily double it to make enough for two. It uses one healthy extra b choice and 1.5 syns.
1 wholemeal wrap (1 x healthy extra b choice)
2 rashers of bacon, fat removed and chopped up small
2 eggs, beaten like for scrambled eggs
A handful of fresh spinach
1 laughing cow light triangle (1.5 syns or use as part of your healthy extra a choice)
Fry up your bacon with a little frylight on a medium heat.
When done, add your eggs and spinach and move around the pan quickly. You don’t want it to be overdone so take it off the heat as it starts to turn more solid and set to one side.
In another pan, prepare your tortilla by frying it lightly on a low heat for 30 seconds on each side, you may need a little frylight in your pan if it’s not a good non-stick.
Spoon in your egg mix into the centre of the tortilla and fold over. Cook for another 30 seconds before turning gently.
Lastly, melt your triangle of laughing cow slightly in the microwave for 20 seconds, and pour it onto the egg mix.
Serve right away!
