Low syn mackerel pate!

This little beauty is a stellar of mine when I need to entertain guests. You can do a little ramekin for each person as a starter or a bigger bowl for dipping. I served here with carrot sticks for me but for guests you can offer them Melba toast or similar (if they aren’t on slimming world!)

4.5 syns for the lot (serves about 6 as ramekins or 8 as a snack with crudités, making it between half a syn and 1 syn per portion).

Ingredients:


Plain boneless smoked mackerel - one standard supermarket packet is around 230g (this is usually about 2-3 standard fillets or 4-6 mini ones) (2 syns per 100g) 
4 heaped tbsp quark
1 tbsp Fresh dill (or alternatively 1tsp of dried is fine if that’s all you have)
Juice of quarter of a lemon

Method: 


1. Remove any skin from the fish and break the fillets into smaller pieces in a mixing bowl. 
2. Add the rest of the ingredients and blitz in a magimix or with a hand blender until smooth. Serve immediately or refrigerate until you’re ready. It only lasts about a day so don’t make too far in advance.
