Aloo Gobi low fat curry
Aloo Gobi - syn free curry.
This special Indian fakeaway treat is not only syn free, but it’s veggie too and full of flavour. All done in the slow cooker so you don’t even have to keep an eye on it! Bonus.
1 large cauliflower, split into florets
1 medium sized potato, peeled and chopped into cubed pieces around 1.5 inches square
400 g (one standard tin) chopped tomatoes
2 garlic cloves, crushed
1 medium onion, diced
1 tsp. turmeric powder
½ tsp. cayenne pepper
½ tsp. cumin seed powder
½ tsp. coriander seed powder
½ tsp. paprika
½ tsp. garam masala
½ tsp. sweetener (granulated)
2 Tbsp. tomato paste
60 ml vegetable stock (don’t make up too strong)
2 tbsp chopped fresh coriander to decorate (optional)
1. Place all the ingredients into the slow cooker, except the chopped coriander, make sure it’s all mixed well before putting the lid on.
2. Combine well, cover and leave to cook on high for 3-5 hours or until the vegetables are cooked through.
3. Sprinkle with chopped coriander and serve. Also works well if left overnight in the fridge and reheated.
