Spaghetti bolognese - a low fat, easy version
A simple spag bol recipe that the whole family will love. I use gravy granules as I think they really improve the flavour, but these are optional. If you remove them, it's syn free!
Serves around 4 people, or is the perfect amount for my slimming world lasagne recipe.
Syns: 0.5 per portion (if using gravy granules, if not then 0 syns per portion!)
5 rashers of bacon, fat removed and chopped into small pieces
500g low fat mince (must be 5% fat or less)
500g tomato passata
2 cloves garlic, crushed
1 red onion, diced finely
1 red chilli, diced finely
1 yellow pepper, chopped into small pieces
1 red pepper, chopped into small pieces
1 tbsp gravy granules (2 syns)
1 crumbled beef stock cube
1-3 tbsp boiling water (possibly)
1. Take a good non stick saucepan and spray with frylight. Put onto a medium heat. Add your chilli, garlic and onion and fry gently before adding the bacon and cooking for a few more minutes.
2. Add the mince and fry that off until it's brown. Then add your peppers, gravy granules and passata. You can also crumble in your beef stock cube at this stage, or if it's too hard to crumble, try melting it in 2-3 tbsp boiling water and adding that mixture.
3. Bring to the boil and then allow to simmer on a low heat for 30-40 minutes. You'll want to check it and stir a few times during cooking. If it's looking a bit dry (unlikely, but still) add a little bit of boiling water to the mix). If you prefer, you can also let it simmer in the oven rather than the hob at 150 degrees. I prefer this method as it gets a lovely flavour and doesn't burn onto the bottom of the pan so much.
4. Serve with your pasta and top with either basil and/or parmesan (don't forget to count the syns if you do slimming world).
